Healthy carrot cake snacks

I am on a mission to have healthy snacks in September. We have a wedding to go to in February but I usually put weight on over winter. I am therefore trying to get into some good habits and see food as fuel rather than just enjoyable and a treat. As we only eat 2 meals a day, I sometimes need a snack to keep me going if I am working hard in the garden, or eating late. I have seen several reels on FB making these healthy carrot snacks (don’t know by who). I therefore experimented today.

Ingredients

2 medium carrots, finely grated

80g rolled oats

70g walnuts

15 stoned dates (soaked in water for 10 minutes)

2 tsp of mixed spice

2 tbsp water (or more if needed when blending)

Desicated coconut to roll in.

Method

1. Soak the dates for 10 minutes. (Use less dates if you making them for a toddler).

2. Put all of the ingredients into a blender except the coconut.

3. Whiz until smooth. Use up to 4tsp water to help blend (some carrots have more juice than others). I used 2.

4. Roll into balls.

5. Cover in the coconut

6. These will keep in the friidge for up to 5 days, or the freezer for 3 months.

Verdict

Heallthy carrot cake snacks were easy to make, and quite frugal. Thankfully, they are sweet enough to stop a craving,. Unlike anything with a chocolate flavour, I didn’t want to eat 3 or 4. It was therefore a win for me. The fact that they freeze is a bonus also as I can just defrost a couple a day. I made 17 balls with this mixture.

      Good. It is a change from chocolate for me but I am trying to wean myself off that 😁
