Beetroot hummus

I am trying to eat more beetroot. I know it is good for me, especially  to lower blood pressure. However, I hate beetroot. It tastes like mud to me!  Usually I make a beetroot chocolate cake with home grown beetroot. That is not very healthy, though. Beetroot hummus is another of the ways that I can ingest it without tasting it.

RECIPE
400g can chickpeas, drained,
juice of two lemons (or 4 dessertspoons from a bottle),
1 small clove of garlic,
2 tbsp of Tahini,
2 tsp olive oil or Rapeseed oil,
salt and pepper.

This is the recipe for plain hummus and so to this I add 70g of cooked beetroot. Some times I use those vacume packs if I don’t  have any home grown ones.

Method

1.Put half the chickpeas in a blender with the lemon juice and garlic and 3 tbsp of hot water and whiz for 10 seconds.

2. Add the rest of the chickpeas, Tahini and oil and whiz until you get the consistency you like. You can add a bit more oil or water if you want it thinner. I like mine chunky with bits in.

3. Season and whiz a few seconds more. Add the beetroot and whiz again. I find that it has a deeper colour if using homegrown beetroot. The vacume packed ones  give a more delicate pink.

4.Store in the fridge in an airtight jar. It is supposed to be used within a week, but it has lasted me a couple of weeks, sometimes. This hummus can also be frozen.

    I didn’t have any fresh so I used patted dry to remove vinegar beetroot and half a teaspoon of dried mint. Absolutely delicious. 😁

    Thank you, I have hummus to eat and use up but once finished I will definitely make some of this. I absolutely love beetroot, sometimes it doesn’t even make it to the plate. Straight from the jar for me xx

    Thank you! I will def try this. I do love beetroot, especially just boiled and still warm. Oh the childhood memories…never made it to the table.
    I’m trying to avoid all the nonsense in shop bought hummus. It really is ridiculous. Haven’t bought it for the longest time and this sounds delicious.

    Finally finding your recipes and a friend should me to open and find recipe you touch the picture . I was touching the squared italics. I could not find the recipes!!
    Have you tried making borscht with beetroot? I am like Mr S. Love beetroot.
    There are so many good for you foods! Do not force yourself to eat what you do not like. You can add the leaves yo salads, stir fry and even make parcels
    Using them, roll up savoury rice with leaves into sausage size and bake in slow cooker in a tomato sauce. So glad I have finally navigated your blog. Thanks so much for all you share
